Apex Cycling has often attributed part of their success to proper nutrition both before the race and during the race. Finding a balance between nutrition, taste, and ease of use can be difficult. They have graciously offered to share some of their recipes with us here is the best way to have a quick and nutritious breakfast.
Mix 3/8 cup water with ¼ cup or 25g flaxseed meal. Set aside to thicken.
In a food processor chop the following:
• 7 large dates (160g)
• 1/8 cup walnuts (15g)
In a large mixing bowl combine the following:
• 1 tsp salt
• ½ tsp cinnamon & ginger or to taste
• 1 dash almond extract or more to taste
• 3 cups oats
• 2 ¾ cups cooked quinoa
• ¾ cup Anderson’s Maple Syrup
• 3/8 cup dark chocolate chips (we like at least 50% cacao)
• 2 Tbls peanut butter
• 2 large mashed bananas (200g)
Combine all ingredients into a large mixing bowl and mix well. Spread mixture onto a glass pan and form into a rectangle approximately ½” thick
Bake in the oven for 25 mins at 375 degrees.
Remove from oven, allow to chill for 2 hours in the fridge, cut into 18 servings. Stores in refrigerator for up to 1 week. Each bar is approximately 205 calories. 34g carbs, 5 g fat,
